Yerba Mate Mint No Bake Squares

Who doesn't love a no bake dessert?! Check out this recipe by Mykaela of @erbandspice who used our Yerba Mate Mint Latte with Matcha and Probiotics to give these no bake squares a delicious minty flavour!

What You’ll Need For The Base:

  • 1 1/2 cups nuts (walnuts, pecans or almonds)
  • 1 cup pitted dates (soak in warm water for 10 minutes to soften if needed)
  • 3/4 cup cacao powder
  • 1/4 cup almond flour
  • 2 tbsp. coconut oil
  • 1/2 tsp. vanilla
  • Pinch of sea salt

What You’ll Need For The Filling:

  • 2 cups raw cashews (soaked overnight in cold water or in warm water for 30mins - 1 hour)
  • 1/4 cup Yerba Mate Mint Latte
  • 1 can coconut milk (400 ml)
  • 1/2 cup maple syrup
  • 3 tbsp. coconut oil
  • 1 tsp. vanilla
  • Pinch of sea salt

          Dairy Free - Gluten Free - Vegan - Refined Sugar Free 

          • Prep Time: 2 minutes
          • Total Time: 5 minutes

            Preparation:

            1. Preparing the cashews: Soak overnight in cool water or for 30 minutes-1 hour in warm water before making. Be sure to rinse well before mixing
              with other ingredients.
            2. Line a 9-inch x 9-inch pan with parchment paper.
            3. Using a food processor, mix together all of the ingredients for the base until a loose crumble forms. Transfer the base to the pan and pat down. 
            4. In a blender, mix together all of the filling ingredients until smooth. Pour overtop of the crust.
            5. Cover and transfer to the freezer to set for minimum 6 hours or
              overnight. Let thaw for 1 hour before serving.
            6. Top with chocolate chips or your favourite toppings
